海鮮控必愛!超級邪惡西式海鮮大雜燴 Cajun Butter Sauce Seafood Platter


I love seafood so much, I'm going to miss it when I leave Hong Kong and the wet market.

Cajun Butter Garlic Sauce Seafood Platter recipe


Ingredients


650g butter

1 cup Minced Garlic

2 Corns Few Baby Potatoes

Thyme


Seasoning Powder

2tbsp Cajun

2tbsp Oregano

2tbsp Paprika

2tbsp Garlic Powder

1tbsp Lemon Salt

1tbsp Black Pepper

1tbsp Mixed herbs

Some Chilli Powder

Salt Sugar



If you like spicy like I do you can add chilli, cayenne or Tabasco as my daughter can"t take spicy, that's why I only add tidy little of spicy😑


Seafood We used Catty In Hong Kong, 1 catty = 600 grams. Below are the amount of seafood that I used for this recipe. Some of the seafood here you might not fine in your area, but just use your own favourite seafood.


Seafood

600g Shrimp

300g Mantis Shrimp

600g Clam

600g Babylon shell

4 Razor Clams

2 Mud Crabs

4 Geoducks

4 Scollops




This original Cajun Seafood boil recipe used Boil but I used Steam as Steaming leaves more of the flavour in seafood. Seafood doesn't take long time to cook, for the steaming time you can see from my video.

Cajun,是美國紐奧良地區的特有香料, 我好多時都會用用Cajun煮雞.


材料

650克 牛油

1杯 蒜蓉

兩條 粟米

幾個 新薯

百里香


自家製調味粉

2湯匙 Cajun

2湯匙 Oregano 奧勒岡

2湯匙 Paprika 紅椒粉

2湯匙 Garlic Powder 蒜粉

1湯匙 Lemon Salt 檸檬鹽

1湯匙 Black Pepper黑胡椒

1湯匙 混合草藥

一些辣椒粉


如果您像我一樣喜歡辣的話,可以加辣椒, 法式辣椒粉 或 Tabasco,因為我的女兒不能吃辣,所以我只可以加一點點的辣😑

以下是此食譜的海鮮量。這裡的一些海鮮可能在您的地區不能買到,但您可以使用自己喜歡的海鮮。


1斤 蝦

半斤 賴尿蝦/螳螂蝦

1斤 花甲

1斤 花螺

四隻 大聖子

2隻 肉蟹

4隻 象拔蚌

4隻 扇貝


其實這個是美國的一個海鮮食譜Cajun Seafood boil,在香港一般叫做Shake shake海鮮袋, 但是在外國不一定是放在袋裏面去Sahke. 外國人一般會用水煮方法去煮海鮮,但我今次就用了蒸的方法,因為蒸更加可以保留海鮮的鮮味. 但蒸海鮮的時間也不能過長可以留意我片中的時間, 因為我蒸完之後還會放入焗爐焗幾分鐘.
